In this case, I’m talking about the flour made from wheat. Today we’ll learn about a Kansas grist mill that is producing flour and benefitting the local economy.

Last week we learned about the Abilene and Smoky Valley Railroad, which runs excursion trains from Abilene to Enterprise, the location of the Hoffman Grist Mill. The mill is managed by Debbie and Terry Thompson. Thanks to railroad volunteer and retired K-State department head Steve Smethers for today’s story.

In the 1860s, a miller named Christian Hoffman migrated from Sweden to Kansas. He saw a place along the Smoky Hill River where he could build a dam for a turbine that would power a grinding stone to grind wheat into flour. The Hoffman Grist Mill began operation in 1869.

The mill initially produced about 60 barrels of flour a day. It became the focal point of the area, spawning a small community of settlers, many of whom worked for Hoffman’s mill.

“The optimism and spirit of those settlers gave birth to the name of the village,” Smethers said. “In honor of Mr. Hoffman’s indefatigable spirit and the enterprising people who settled in the area, the community was named Enterprise.”

Hoffman’s milling business grew. By the turn of the 20th century, the Hoffman Grist Mill produced 1,200 barrels of flour daily. His flour was sold nationwide and beyond.

“In the era preceding hard red winter wheat -- the variety that is grown by Kansas producers today -- the River Valley farmers in the late 1800s grew Heritage Turkey Red, a strain of wheat brought to the region by Mennonite settlers,” Smethers said. “Turkey Red made an excellent flour, and the availability of Hoffman’s mill as a customer market ensured that area farmers grew a lot of the Russian wheat variety.”

In 1886, the Chicago, Rock Island and Pacific Railroad was built through Enterprise, just south of the Hoffman Mill on the banks of the Smoky Hill River. A year later, the Atchison, Topeka and Santa Fe also entered Enterprise near the mill on the east side. The mill prospered for decades but closed during the Great Depression.

Joe Minnick, the founder of the Abilene and Smoky Valley Railroad and a native of the area, was always fascinated by the Hoffman story. He decided to design and build a replica of the original mill on the south side of the Abilene and Smoky Valley right of way, across the street from Hoffman’s original plant.

Minnick located grinding stones and other milling equipment that he fashioned into a reincarnation of the Hoffman Mill. He even commissioned area farmers to grow Heritage Turkey Red wheat for the replica mill, which opened in 2016.

Today, the Hoffman Grist Mill produces several varieties of flour, including whole wheat, “bolted” or sifted white flour, and farina (often prepared as hot cereal). The mill also sells whole kernel wheat berries and corn meal, and produces a pancake mix, seasoned flour, and other special wheat-based products that are popular with tourists, train passengers, and area bakeries.

One local baker uses grist mill flour in making the cinnamon rolls that are served on A&amp;SV coffee break trains. Also available at the grist mill are meat, cheese, honey and other locally produced products.

Visitors can drive to the mill, or when riding the excursion train, can tour the mill while the railroad’s engineers turn their diesel or steam locomotives around for the return trip to Abilene.

“The Hoffman Mill is a popular attraction for tourists, school children and train passengers,” Smethers said.

It’s a wonderful asset for a rural community such as Enterprise, population 708 people. Now, that’s rural.

Kansas Profile – Now That’s Rural: Hoffman Grist Mill

MANHATTAN, Kan. – The Fourth of July is full of food, fun and fireworks. As family and friends attend gatherings and events, Kansas State University food scientist Karen Blakeslee says food safety should be a top priority during festivities. &nbsp;

The top four tips Blakeslee encourages include:&nbsp;

-Always wash your hands before handling food and eating. Wash them after handling raw meats. &nbsp; - Keep raw foods away from ready-to-eat foods to prevent cross contamination. Consumer research has shown that 32% of consumers had contaminated plates and cutting boards. And don’t forget spice containers, Blakeslee said. Of those surveyed, 12% had contaminated spice bottles.

&nbsp;- Keep hot foods above 140 degrees Fahrenheit during serving. If outside on hot days above 90°F, store leftovers within one hour.

- Keep cold foods below 40 F. Marinate meats in the refrigerator. Toss the used marinade or boil it to use as a dip. Refrigerate leftovers within one hour on hot days.&nbsp;

Blakeslee, who is also coordinator of&nbsp;<a href="https://www.rrc.k-state.edu/">K-State’s Rapid Response Center for Food Science</a>, recommends using a food thermometer when cooking meats. Look for 145 F for steaks and chops, 160 F for ground beef, pork, lamb, and 165 F for all poultry. Hot dogs, hamburgers, grilled foods and barbecue are among the most common foods served at large gatherings. "Keep it simple. Use ice chests with ice or ice packs to keep foods cold. If using the grill, be sure someone is managing the grill for overall safety,” Blakeslee said. &nbsp;

In 2020, a statement posted on his Twitter account revealed that former GOP presidential candidate Herman Cain was being treated for the coronavirus at an Atlanta-area hospital, less than two weeks after attending President Donald Trump’s campaign rally in Tulsa, Oklahoma. (Cain died on July 30 of complications from the virus.) British socialite&nbsp;<a href="https://apnews.com/article/89212f72a6ca436f038e88ffd0250a40">Ghislaine Maxwell was arrested in New Hampshire</a>&nbsp;on charges that she had helped lure at least three girls – one as young as 14 – to be sexually abused by the late financier Jeffrey Epstein. HUTCHINSON, Kan. — The American Farmers Feed the World Act is a bill introduced by legislators from both parties, including Kansas First District Congressman Tracey Mann.

"It does not spend any more money," Mann said. "It's a technical change to make sure as we are doing food aid around the world, let's be making sure that we are sending American grown commodities, our ag products. Let's not just send money. When you just send money, it's hard to track that money. Let's make sure that we are sending American grown commodities."

The goal is protecting at least 50% of the budget for purchasing U.S.-grown commodities and delivering them to the destination country.

"Wheat is the number one commodity used for food aid," Mann said. "There's other commodities, as well. These programs were set up to increase demand and to make sure that we use our American grown ag products. We've gotten away from that. This bill returns us to the original intent of these programs."

The bill would also require U.S. Agency for International Development (USAID) to report to Congress on all program implementation and budget details and requiring U.S. Department of Agriculture (USDA) approval.

"When you send commodities, it's good for the American farmer," Mann said. "It's good for our American shippers and it's good for the people that receive them, as well. Realize that when we send food aid, it goes in a bag and the bag says, a free gift from the taxpayers of America. There's an American flag on it, there's two hands shaking hands. The goodwill that it promotes in these countries is incredible."

Mann was joined by&nbsp;John Garamendi (CA-08), Rick Crawford (AR-01), and Jimmy Panetta (CA-19) in sponsoring the legislation. Garamendi and Panetta are Democrats. Crawford and Mann are Republicans.

Neighbors helping neighbors is a Kansas way of life - and it applies not only to combining a wheat field down the road for folks down on their luck, but also to those in need around the world. 

It was a Kansas farmer who first proposed the idea of sharing grain with countries in dire need nearly 70 years ago. Today, another Kansan - First District U.S. Representative Tracey Mann of Salina - is helping carry that torch by leading legislative efforts to keep the food in now well-established U.S. food aid programs.&nbsp;

“Kansas wheat producers are proud to continue a tradition of championing food aid programs that provide high-quality wheat to those in need,” said Kansas Wheat CEO Justin Gilpin. “These programs have saved lives and built goodwill all in one simple gesture, and we are proud to support the push to keep the food in food aid.”&nbsp;

Peter O’Brien, a young farmer and rancher from Cheyenne County, first suggested donating grain to countries in need during a county meeting in September 1953. Those comments sparked a grassroots movement, leading to the Agricultural Trade Development and Assistance Act in 1954, sponsored by U.S. Senator Any Schoeppel, Claflin, and signed into law by President Dwight D. Eisenhower, Abilene - both Kansans.&nbsp;

The pillar of today’s modern food aid programs was a common goal: provide people in developing countries with a secure food source, and they will do more than survive. As their economies recover and thrive, they become new potential buyers of U.S. exports.&nbsp;

For decades, the implementation of food aid programs stayed true to this purpose, purchasing and donating U.S.-grown commodities, like wheat, to countries in need. Wheat has been a staple in the fight against global hunger, accounting for roughly 20 percent of the calories consumed globally. In recent years, however, the programs have shifted to transferring cash and purchasing commodities from foreign competitors with U.S. dollars.&nbsp;

Today, another Kansan - First District U.S. Representative Tracey Mann of Salina - is helping carry that torch by leading legislative efforts to keep the food in now well-established U.S. food aid programs.&nbsp;“Kansas wheat producers are proud to continue a tradition of championing food aid programs that provide high-quality wheat to those in need,” said Kansas Wheat CEO Justin Gilpin. “These programs have saved lives and built goodwill all in one simple gesture, and we are proud to support the push to keep the food in food aid.”&nbsp;Peter O’Brien, a young farmer and rancher from Cheyenne County, first suggested donating grain to countries in need during a county meeting in September 1953. Those comments sparked a grassroots movement, leading to the Agricultural Trade Development and Assistance Act in 1954, sponsored by U.S. Senator Any Schoeppel, Claflin, and signed into law by President Dwight D. Eisenhower, Abilene - both Kansans.&nbsp;The pillar of today’s modern food aid programs was a common goal: provide people in developing countries with a secure food source, and they will do more than survive. ELLSWORTH COUNTY—One person was injured in an accident just before 6p.m. Friday in Ellsworth County.

The Kansas Highway Patrol reported a 2002 Freightliner semi driven by Robert R. Denton, 53, Lyons, was eastbound on Avenue V at 10th Road in Lorraine.

The driver failed to yield to southbound traffic and struck a 2020 Honda Pilot driven by Melissa J. Rolfs, 38, Lorraine.

EMS transported Rolfs to the hospital in Ellsworth. Denton was not injured. Two juveniles present in the Honda. Juvenile record protected data, according to the KHP.

Two motorcyclists from Salina were injured and cited for reckless driving on Thursday evening in southeast Salina.&nbsp;

At approximately 7:10 p.m. Thursday Salina Police Department officers were dispatched to the 1800 block of S. Markley Road, near the Berkley Family Recreational Area. SPD had received eyewitness reports of two&nbsp;motorcyclists allegedly driving at excessive speeds while "doing wheelies and donuts in the area."

The motorcyclists were later identified as, Cody McElderry,&nbsp;34, of Salina and Brandon Sanders, 27, of Salina. During the time the pair were driving recklessly, McElderry pulled in front of Sanders causing the motorcycles to collide.&nbsp;

Both drivers were injured. Sanders was transported to Salina Regional Health Center with&nbsp;non-life threatening injuries. Salina Police Sergeant Kyle Tonniges said this morning both drivers were cited for reckless driving&nbsp;and&nbsp;Sanders&nbsp;was also cited for no proof of insurance.

Both Sanders and McElderry were wearing helmets at the time of the accident.&nbsp;

Two local motorcyclists cited for reckless driving following accident

Kansas Historical Society William H. Martin of Ottawa, Kansas, is considered to be the best at producing exaggerated postcards. His work featured huge ears of corn and peaches, a giant rabbit being tracked by a car, and pumpkins uprooting a farmstead.

Around the turn of the century Kansas farmers harvested produce bigger than the imagination. Heavy equipment was needed to can giant peaches; a saw was used to cut an ear of corn; and a couple of onions made a wagon load. Picture postcards documented the produce prosperity.

Martin's photography studio began experimenting with trick photography around 1908. He was so successful that he established the Martin Post Card Company in 1909 and reportedly produced seven million cards the next year.

Tall tale postcards required creativity and skill. A photographer took two black-and-white pictures: a wide shot and a close up. The enlarged image would be cut, placed, and glued over the wide shot to create the exaggeration. Headlines such as "Shipping a Few of Our Peaches" and "Harvesting a profitable crop of onions in Kansas" helped further the flight of fancy.

Considered western humor, exaggerated postcards were extremely successful in the Great Plains. Their puffery depicted the fertile farming for which many settlers had come to Kansas. They also showed a sense of humor in dealing with disaster in the state.

When a swarm of grasshoppers descended on Garden City in 1935, Frank D. "Pop" Conard had a vision. The photographer made a montage of giant insects with humans and sold the postcards like "hotcakes." "The idea," Conard said, "came to me after a flight of grasshoppers swarmed into Garden City attracted by the lights, and it was impossible to fill an automobile gasoline tank at filling stations that night. I went home to sleep, but awoke at 3:00 a.m. and all I could think about was grasshoppers. By morning I had the idea of having fun with the grasshoppers, and took my pictures and superimposed the hoppers with humans. Heavy equipment was needed to can giant peaches; a saw was used to cut an ear of corn; and a couple of onions made a wagon load. Picture postcards documented the produce prosperity. Martin's photography studio began experimenting with trick photography around 1908. He was so successful that he established the Martin Post Card Company in 1909 and reportedly produced seven million cards the next year.Tall tale postcards required creativity and skill. A photographer took two black-and-white pictures: a wide shot and a close up. The enlarged image would be cut, placed, and glued over the wide shot to create the exaggeration. Headlines such as "Shipping a Few of Our Peaches" and "Harvesting a profitable crop of onions in Kansas" helped further the flight of fancy.Considered western humor, exaggerated postcards were extremely successful in the Great Plains. MANHATTAN, Kan. – The&nbsp;<a href="http://www.kansas4-h.org/">Kansas 4-H Youth Development program</a>&nbsp;has recognized more than two dozen youth as state project award winners.

Sarah Maass, state leader for the Kansas 4-H program, said “being a state project winner indicates prior excellence and points to (youth’s) future potential.”

“Youth must display leadership skills and hearts for service by organizing events like community service projects, project meetings to share their expertise with younger 4-H members, and other unique efforts,” Maass said.

One state winner is selected yearly from the senior division (ages 14-18) in 27 project categories. Kansas 4-H youth submit a project report form, a summary of their work in a certain project.

Maass notes that in addition to learning new project skills, these youth must also demonstrate growth and strength in leadership, organization, civic engagement, and above all, communication within the project.
