County and state fairs are around the corner, and food is a main attraction. From vendors and trucks to projects and competitions, Kansas State University food scientist Karen Blakeslee said knowing how to prevent food safety mishaps is key.&nbsp;

“For any food preparation, always wash your hands before handling food,” Blakeslee said. “Use plastic gloves or utensils to handle ready-to-eat foods.”&nbsp;

Blakeslee recommends wearing closed toe shoes for safety in the case of accidents and securing hair with a hat or other method to keep hair out of food.&nbsp;

Food projects need to be safe for judges to sample, she added.&nbsp;

“There are several ways to check for doneness of baked goods such as the recommended baking time, color, touch, inserting a toothpick and it comes out clean, and using a food thermometer,” Blakeslee said.&nbsp;

Blakeslee, who is also coordinator of&nbsp;<a href="https://www.rrc.k-state.edu/" target="_blank">K-State’s Rapid Response Center for Food Science</a>,&nbsp;&nbsp;suggests preparing food entries early and freezing them to help save time and stress at county fairs.&nbsp;

“Most baked goods freeze well and can still be blue ribbon quality. This includes cookies, yeast and quick breads, and cakes,” Blakeslee said.&nbsp;

Additional tips for freezing food entries include:&nbsp;

Bake the product as usual. Cool completely to help prevent condensation inside the wrapping and the development of ice crystals.&nbsp;

Use moisture-vapor resistant packaging. This includes freezer-safe plastic containers or bags, heavy-duty aluminum foil, and rigid containers.&nbsp;

Separate layers of cookies with wax paper or parchment paper.&nbsp;

If a cake or bread is to be frosted, freeze the product only and frost after it is thawed.&nbsp;

When preparing pies, Blakeslee suggests making pie crusts ahead of time and freezing them.&nbsp;

“Freezing whole prepared pies can cause the filling to soak into the crust,” she said.&nbsp;

When the time comes to thaw the product, thaw all baked goods in the freezer packaging.&nbsp;

“They can be thawed at room temperature. Remove from the freezer the night before the fair. Once thawed, repackage into the proper packaging according to your fair rules,” Blakeslee said.&nbsp;

Signage at the fair is also important when preventing food safety hazards.&nbsp;

“There have been foodborne illness outbreaks traced back to fairs in the past. If handling animals, washing hands is very important before handling or eating food because of the chance of contamination from&nbsp;E. coli&nbsp;bacteria,” Blakeslee said.&nbsp;

She suggests using signage to help remind fair-goers of simple tips for food safety.&nbsp;

“It’s a joint effort between the fair organizers and fair-goers to make the effort to prepare, serve and consume safe food,” Blakeslee said.&nbsp;

Blakeslee publishes a monthly newsletter called&nbsp;<a href="https://www.rrc.k-state.edu/newsletter" target="_blank">You Asked It!</a>&nbsp;that provides numerous tips on food safety. More information is also available from&nbsp;<a href="https://www.ksre.k-state.edu/about/statewide-locations.html" target="_blank">local extension offices</a>&nbsp;in Kansas.&nbsp;

NWS: Scattered Showers in Our Area This Evening

Five new individuals have been elected to the Kansas Wesleyan University Board of Trustees, according to information released by the university Saturday. Rev. H. Sharon Howell (Lenexa, Kan.), Roy Lawrence (Salina, Kan.), Dr. Stefanie Milam (Annapolis, Md.), Byron Norris (Salina, Kan.) and Jon Starks (Salina, Kan.) join a group of 23 distinguished church, civic and business leaders who set the future of the university.&nbsp;

“We are so fortunate to&nbsp;have&nbsp;this impressive and diverse group of&nbsp;five&nbsp;individuals&nbsp;join our KWU Board. They have&nbsp;each&nbsp;demonstrated&nbsp;leadership in their respective areas and a&nbsp;dedication to our mission. They will&nbsp;enhance the work of&nbsp;our Board of&nbsp;Trustees,” said Dr. Matt Thompson, KWU president.&nbsp;

The board’s newest officers are led by chair Marilyn Foster Kirk ’68 (Evanston, Ill.), while Barry Weis ’10 (Salina, Kan.) is the immediate past chair. Ken Ebert (Salina, Kan.) is the vice chair and Charles Spencer (Kansas City, Mo.) serves as treasurer, while John Redding ’91 (Salina, Kan.) is the secretary.&nbsp;

Rev. H. Sharon Howell&nbsp;is a retired United Methodist (UMC) clergy member and former president of Saint Paul School of Theology. She previously served UMC churches in Texas, Missouri, and Kansas.&nbsp; Howell earned her Bachelor of Arts from Austin College and her Master of Divinity from Saint Paul.&nbsp;

Roy Lawrence ’65&nbsp;is part-owner of the Salina Liberty indoor football team and the former director of development for St. John’s Military School in Salina. He graduated from Kansas Wesleyan with a Bachelor of Arts degree in Health, Physical Education and Recreation in 1991.

Dr. Stefanie Milam ’02&nbsp;is the James Webb Space Telescope (JWST) Deputy Project Scientist for Planetary Science at the NASA Goddard Space Flight Center. Milam was one of the lead scientists on 2022’s launch of the JWST and discussed the launch on multiple national platforms, including 60 Minutes and national PBS programming. She is a 2002 graduate of KWU with a Bachelor of Science degree in Chemistry, and earned her Ph.D. in Chemistry from the University of Arizona in 2007. She was recognized with the KWU Young Alumni Award in 2008.

Byron Norris ’72&nbsp;is the retired vice president for human resources/risk management at McShares, Inc., based in Salina. He graduated from KWU with a Bachelor of Science degree in Biology in 1972 and also holds a Master of Science degree from Wichita State University. He previously served on the Board of Trustees from 2013-22.

Jon Starks&nbsp;is the retired president and CEO of UMB Bank, Salina and Abilene. He graduated with a Bachelor of Arts from the University of Kansas, as well as the Graduate School of Banking at the University of Delaware, the American Bankers Association National Commercial Lending School at the University of Oklahoma and the Bank Marketing Association School of Bank Marketing at the University of Colorado. Starks previously served on the KWU Board of Trustees 2012-21, including a term as treasurer.

In other Board of Trustees business, four trustees were elected for an additional three-year term: Ebert; Charles Grimwood; Redding ’91 and Weis ’10. Ebert and Grimwood are past recipients of the university’s Alumni by Choice honor.&nbsp;

Two board members were elected as Trustee Emeriti, with terms expiring in 2028: Emily-May Richards (Peoria, Ariz.) for her first term as Trustee Emerita and Randy St. Clair (Parkville, Mo.) for his second term as Trustee Emeritus. Richards is a past recipient of the university’s Alumni by Choice honor.&nbsp;

Weis was recognized for his service as the board chair from 2021-23, while Julie Sager Miller (Salina, Kan.) and Richards, both outgoing trustees, were formally thanked for their nine years of service.&nbsp;

The Kansas Wesleyan University Board of Trustees meets three times each year. The essential function of the Kansas Wesleyan University Board of Trustees is policy-making and assurance of sound management and fiduciary responsibility. KWU Announces Newest Additions to Board of Trustees

On Sunday, July 2nd, 2023, Officers with the Salina Police Department took a report of a theft at Atwoods, 400 S. Broadway Blvd., Salina. Employees reported a white male suspect drew their attention when he entered the store wearing a hooded sweatshirt. When the subject left, he set off the anti-theft alarm.

Employees reviewed video surveillance and found the suspect had concealed Milwaukee power tools in his shirt. The tools are valued at over $200. The suspect was seen leaving the area in a silver Chevrolet four door.

Meet Rhett. He calls himself "Danger".&nbsp; He&nbsp;loves coffee, reading, and skydiving. he is 1 year old.&nbsp; Did we mention he likes coffee?&nbsp; According to his handlers one morning Rhett was minding his own business when a someone came in and flipped on the lights at 5:30am.

Rhett&nbsp;quickly discovered his handler had left a mug of hot steamy liquid gold on the sink counter.&nbsp; It smelled of heavens nectar so he had a sip. WOW!!!!!

He is a sweet sweet boy looking to find a family with a Keurig, lots of love and warm laps and possibly enough money to help him with his caffeine addiction.&nbsp; Rhett loves staring at the birds from his window and Coffee.

Salina Post Shelter Pet of the Week: Meet Rhett

Chris’s Place Child Advocacy Center (CAC), under the umbrella of CAPS of Salina, has been awarded reaccreditation by National Children’s Alliance (NCA) following an extensive application and in-depth site review process, which occurs every five years. NCA also evaluates standards regarding a center’s cultural competency and diversity, forensic interviews, victim support and advocacy, medical evaluation, therapeutic intervention, and child focused setting.

As the accrediting agency for Children’s Advocacy Centers (CAC) across the country, NCA awards various levels of accreditation and membership to centers responding to allegations of child abuse in ways that are effective and efficient and put the needs of child victims of abuse first. Accreditation is their highest level of membership and is considered the national authority on multidisciplinary approaches to supporting child victims of abuse.

Their accreditation standards were revised in 2023 and are considered the nation’s best practice for CAC’s using evidence-based methods. Chris’s Place is one of the first CACs in Kansas to meet the newly revised standards.

"The reality of child abuse is a sad and often unsung song, and though I believe the work we do speaks for itself, to be recognized at a national level is just incredible! I am so proud to be part of this team and this movement- amazing people doing hard work and all of it, for the kids," said Eliza Hemmer, Program Director, Chris’ Place Child Advocacy Center.

Chris’s Place CAC obtained accreditation in 2006 and has supported over 2,000 children to recover from their abuse since opening their services.

It's a big blue world at the Center for Theatre Arts in Salina this weekend. 

You only have one more chance to see Theatre Salina's 2023 Summer Stage performance of Finding Nemo Jr.&nbsp;

Disney’s Finding Nemo Jr. is a 60-minute musical adaptation of the beloved 2003 Pixar movie Finding Nemo, with new music by award-winning songwriting team Kristen Anderson-Lopez and Robert Lopez.

"The music that accompanies this production is everything that you want out of a Disney show," said Maggie Spicer Brown, Center for Theatre Arts education director. "This show also has everything we want out of a summer stage show. It's the story that you love paired with the talent of the students that we have each year."

Spicer-Brown said with the help of lighting projections, set pieces, sound effects and expertly designed fish costumes, audiences will feel like they are underwater.&nbsp;

"One of the things that we love so much about summer stage is truly the element of fantasy that we get more out of this show than any other that we can do for CTA throughout the year," Spicer-Brown said.&nbsp;

The story centers around Marlin, an anxious and over-protective clownfish, living&nbsp; in the Great Barrier Reef with his kid Nemo- who longs to explore the world beyond their anemone home. But when Nemo is captured and taken to Sydney, Marlin faces his fears and sets off on an epic adventure across the ocean. With the help of lovable characters such as optimistic Dory, laid-back sea turtle Crush, and the supportive Tank Gang, Marlin and Nemo both overcome challenges on their journey to find each other and themselves.

Featuring memorable songs such as “Just Keep Swimming,” “Fish Are Friends Not Food,” and “Go With the Flow,”&nbsp;Finding Nemo JR.&nbsp;brings a vibrant underwater world to life on stage in a story full of family, friendship, and adventure.

"The kids worked their little tails off and we hope that the Salina community comes out to support them and this production," Spicer-Brown said. "It really is such a wonderful show for families to enjoy together. It's not too long. It's catchy and it is vibrant to the eye."

Just Keep Swimming! CTA presents 'Finding Nemo Jr.' showing July 7-9

In this video, K-State Research and Extension entomologist Jeff Whitworth explains the university’s work to develop nano-pesticides that will kill pests with fewer pesticides released into the environment.

“We're already starting to select and screen what we call green pesticides -- or organic pesticides -- to see if there's any value in using some products that we don't normally consider pesticides,” Whitworth said. “At the nano level, they may be more easily absorbed or taken up by the pest.”

Nano-entomologist Amie Norton said one approach includes recycling agricultural waste.

This type of preventative maintenance is fairly new to Salina but has been used to help extend the life of many roads around the State of Kansas. It consists of a thin, coarse aggregate hot mix over a special asphalt membrane similar to a chip seal but placed in one pass with a spray paver. 

The membrane prevents water intrusion and provides a superior bond to the old asphalt. The overlay can disperse water quickly off the surface, which reduces roadway spray from vehicles and provides greater visibility and traction in wet weather. UBAS has performed well for other cities and provides a good friction surface in wet weather. UBAS can be installed quickly, and asserts a longer lifespan (8-10 years) than micro-surfacing (6-7 years).

The $759,000 project is a major part of the City of Salina’s $4.7 million 2023 maintenance capital improvement program.

Randy’s interactive show "Cool to be Kind”will have you moving, grooving, singing along, and learning about the power of kindness and empathy.

The event kicks off at 10:15 a.m. at the <a href="https://salinapubliclibrary.org/">Salina Public Library.</a>

Born and raised in Norton Kansas,&nbsp;Randy was involved with music all throughout his school years. His love of music eventually led him to attend Fort Hays State University, where he earned a Bachelor’s Degree in Music Education. He later earned his Master’s Degree, with an emphasis in music composition and recording.&nbsp;

Presently, Randy is a K-6 Music Teacher&nbsp;in Hays, KS where he teaches elementary music and sixth grade band. He was selected as the 2013 - 2014 Outstanding Elementary Music Teacher by the Northwest Kansas Music Educators Association.

Randy has been teaching since 1990. After many years as a band director for grades fifth through twelfth, Randy began teaching elementary music. “I started using my composition skills to write music for elementary classes, and found the kids loved my original music,” Randy said. “This is where the beginnings of the “Randy’s Music Jam” show started.&nbsp; Randy’s Music Jam has been performing since 2008, performing in Kansas, Nebraska, and Oklahoma. One of the highlights of the summer for many 4-Hers is taking their livestock projects to the county fair, but unexpected health challenges can keep those animals from being eligible to show, says Kansas State University veterinarian Bob Larson.

Speaking on a Beef Cattle Institute&nbsp;<a href="https://ksubci.org/2023/06/30/preparations-for-the-fair-heat-stress-research-round-up/">Cattle Chat</a>&nbsp;podcast, Larson said: “Ringworm and warts are two of the most common conditions that would keep a calf from being able to go to the show.”

Many fairs require that the animals have a health evaluation by a veterinarian prior to the exhibition. Larson encouraged 4-Hers to look carefully for warts, ringworm, or any other problems early in the summer so that there is time to treat them well ahead of show day.

K-State veterinarian Brad White agreed, adding: “Both these conditions take time to clear and so families need to work with a veterinarian to make sure they have the right treatment plan in place.”

Warts involve removing them so that the calf’s body will create an immune response to clear them. Since ringworm is a fungus, it is best treated with sunlight and a topical cream, said Larson.

Larson also suggested inspecting the trailer well ahead of travel to the fair.

“Calves can get injured in the process of hauling them to the show, so it is important to look at the trailer to make sure there isn’t anything sharp exposed and that the flooring is solid,” Larson said.

Once cattle get to the fair, it is important to provide feed, forage and water that is familiar to them, said K-State beef cattle nutritionist Phillip Lancaster.

“When cattle go to a fair for the first time, it can be a stressful situation for them with all the people around them in an unfamiliar place, so it is important to keep them following their routines as much as you can,” Lancaster said.

And part of keeping that routine involves feeding the cattle the same feed and hay type in a familiar feed pan and, most importantly, to make sure they are drinking water, according to Lancaster.

“If the cattle have been drinking well water, the city water offered at the fair may smell or taste different to them and cause them not to drink as much and so they may need to have water brought from home,” he said. “If that is the case, you’ll need to bring plenty of water because in the summer those cattle will drink 15-20 gallons/day.”

For Kenton and Lindsey Dreiling, starting their own aviation business in Salina, Kansas didn’t take much deliberation. It was more of a feeling of “we cannot miss this opportunity,” said Kenton. “This is something we have always wanted to do, and the timing just felt right.”&nbsp;

Lindsey agreed, sharing that the most unexpected and wonderful thing that has happened since they launched their business was the feeling of being in the exact right place at the right time. “As I sat in my first consult meeting it was as if every experience I had in my career prior, was meant for this moment. That feeling that you are where you are supposed to be,” said Lindsey. “These are the moments you only get to see looking back and realizing you are meant to be where you are. No doubts, just possibilities.”&nbsp;

The couple, using their education, skill, and passion, started Dreiling Aviation in 2022 and offer aviation business consulting services as well as operational services for small UAS. The duo is currently partnering with the Salina Airport Authority (SAA) to support aviation operations in Salina. This includes business case proposals, investor pitch decks, and strategic planning.&nbsp;

Tim Rogers, SAA Executive Director told the SAJ that Lindsey is uniquely qualified to provide airport operators and aviation business owners high level, strategic planning support. “Together, Lindsey and Kenton offer their clients an array of consulting services that very few in the nation can provide,” said Rogers.&nbsp;

Looking back, even with no history of aviation in her family, Lindsey wanted to fly for as long as she could remember. “It is difficult to know where and when the seed was planted,” said Lindsey, a Certified Flight Instructor for Airplane Single &amp; Multiengine Land (CFI, CFII, MEI), “but this is what I remember. My dad was always interested in flying and we grew up watching what I call yellow eagles (aerial applicators), fly over our family farm. Each time a plane would fly over the whole family would run outside and wave to the yellow bird above.”&nbsp;

For Kenton, it was attending air shows as a kid. “I remember being in awe of the huge aircraft on display; this really sparked my interest in aviation. I was building rockets and balsa planes and built my first remote control plane at age 12,” said Kenton. “From then on remote aircraft have been in my life. My passions for electronics and aviation lead me to build my first drone in college while I was working on my degree as an electronic and computer engineer, and it has been with me ever since.”&nbsp;

Kenton, who continues to work full-time as Enel North America’s Robotics and Technology Manager, has years of experience flying UAS, analyzing data, and supporting farmers using UAS for agriculture mapping. He is Part 107 sUAS certified and is a UAS Flight Instructor. Kenton also has developed a UAS curriculum at Kansas State University focused on fire and hazmat training for public safety officials.&nbsp;

UAS is growing quickly, but at this point according to Lindsey, the primary focus for the business is for aviation consulting with a few short-term weekend UAS flights. “However, as the need for sUAS operations grow we have a team ready,” said Lindsey. “We love supporting aviation companies in their vision and mission and seek to aid in strategic planning, leadership development, business operations, and market intelligence.”&nbsp;

The couple brings a wealth of knowledge from multiple sectors of the industry including Advanced Air Mobility, Uncrewed Aircraft Systems, and aviation business. “Our goal is to support activities that need that extra surge of support to grow business or solve a complex challenge,” said Lindsey. One specific gap they are seeing in the industry right now is the need for intentional aviation leadership programs designed to equip a diverse workforce advancement in aviation fields.&nbsp;

“Another goal is to continue to grow our business in the public safety sector and use drones to help first responders in their mission,” said Kenton. “Drones can help in a multitude of industries. The idea of helping people by using tools that they might not have thought of or using them in a new way gets me excited.”&nbsp;

When asked if running a business as husband and wife was easier or more difficult, Kenton suggested having a family business is an advantage. “We are always bouncing ideas off each other – It could be 10 p.m. and one of us thinks of something.”&nbsp;

Lindsey said one of the keys to a successful business whether it’s family run or otherwise, is to lead with curiosity and hope. “We approach each challenge by listening, asking questions, and being open to new understandings. We truly believe better opportunities for growth and achievement are attainable.”&nbsp;

To that end, Lindsey each morning takes a deep breath giving thanks for another day to build the life of their dreams. “It is an amazing time. We are experiencing an evolution of aviation and transportation with a generation full of people that truly believe they can make the world a better place,” said Lindsey. “With that mindset and motivation, anything is possible.”&nbsp; &nbsp;&nbsp;

For the Dreiling family including the children, the biggest reward of launching their own business has been finding a way to work and spend more time together. “I get to work with my best friend and to see a project that we completed, succeed,” said Kenton. For Lindsey, it’s working with her favorite person and taking another adventure together. “Put simply, it’s fun doing something you love with the person you love.”&nbsp;

A harmful algal bloom (HAB) may look like foam, scum or paint floating on the water and be colored blue, bright green, brown or red. Blooms can develop rapidly; if the water appears suspicious or there is decaying algae on the shore, avoid contact and keep dogs away. These toxins can be absorbed by ingestion, inhalation of aerosols and even skin contact. Symptoms vary depending upon the type of exposure (e.g. direct contact, ingestion, inhalation) but can include rash, vomiting, diarrhea, fever, sore throat, and headache. Actual setback distances will be determined on a site-specific basis, if necessary. ●When partial closures (i.e., beach or cove) are issued, the remaining lake or zone area will carry a warning status.A&nbsp;Warning status&nbsp;indicates that conditions are unsafe for human and pet exposure. &nbsp;Contact with the waterbody should be avoided.&nbsp;When a warning is issued, KDHE recommends the following precautions be taken:&nbsp;●Signage should be posted at all public access locations.●Inhalation of spray or aerosols may be harmful.●Lake water is not safe to drink for pets or livestock. &nbsp;. Lake water, regardless of blue-green algae status, should never be consumed by humans. ●Water contact should be avoided. ●Fish may be eaten if they are rinsed with clean water and only the fillet portion is consumed, while all other parts are discarded. ●Do not allow pets to eat dried algae. ●If lake water contacts skin, wash with clean water as soon as possible. Avoid areas of visible algae accumulation. &nbsp;A&nbsp;Watch status&nbsp;means that blue-green algae have been detected and a harmful algal bloom is present or likely to develop. People are encouraged to avoid areas of algae accumulation and keep pets and livestock away from the water.&nbsp;During the watch status, KDHE recommends the following precautions be taken:&nbsp;●Signage should be posted at all public access locations.●Water may be unsafe for humans/animals.●Avoid areas of algae accumulation and do not let people/pets eat dried algae or drink contaminated water.●Swimming, wading, skiing and jet skiing are discouraged near visible blooms.●Boating and fishing are safe. However, inhalation of the spray may affect some individuals. ●Avoid direct contact with water, and wash with clean water after any contact.●Clean fish well with potable water and eat fillet portion only.&nbsp;Advisories are&nbsp;Lifted&nbsp;when cell densities and toxin concentrations dissipate to levels&nbsp;below&nbsp;the Watch thresholds.KDHE investigates publicly accessible bodies of water for blue-green algae when the agency receives reports of potential algae blooms in Kansas lakes. Based on credible field observation and sampling results, KDHE reports on potentially harmful conditions. &nbsp;If you observe a scum or paint-like surface on the water, small floating blue-green clumps or filaments in the water, or if the water is an opaque green, avoid contact and keep pets away. These are indications that a harmful bloom may be present.
