MANHATTAN – In what can sometimes feels like a sea of adversity, there are reasons for optimism in the food industry during the global pandemic caused by the new coronavirus.

“With COVID-19, there are so many unfortunate things that have happened, but one bright spot is that there is really an awareness now of the importance of not wasting food, and a new understanding of the complexity of the food chain,” said Jeanette Thurston, director of the Kansas State University Food Science Institute.

Thurston was one of two guests on a recent episode of the Beef Cattle Institute’s weekly&nbsp;<a href="https://ksubci.org/2020/06/05/meet-jeanette-thurston-dustin-questions-new-consumer-behaviors-top-post-pandemic-consumer-behaviors-food-security/" target="_blank">Cattle Chat</a>&nbsp;podcast talking about the changing habits of consumers. Also joining the podcast was Patti Dollarhide, BCI’s value chain alliance director as well as agricultural economist Dustin Pendell, beef extension specialist Bob Weaber, and veterinarians Bob Larson and Brad White.&nbsp;&nbsp;

“Right now, I shop at the grocery store once every two weeks, so the shelf-life of the food products is important to me,” Thurston said, adding she appreciates the extra time that shopping for food online provides her and it is something she expects to continue after the pandemic is over.

To extend shelf-life, Thurston encouraged consumers to incorporate more frozen and pre-packaged items in their meal plans.

Dollarhide said consumers are adopting many habits that dieticians have suggested for years.

“Taking a shopping list to the store with you and paying attention to the food’s nutritional benefits are some ways to avoid impulse buys and eat healthier,” she said.

Several of those on the podcast said they are experimenting with different cuts of meat on the grill and in their kitchens. “This is a time when people are trying to prepare less expensive cuts of meat,” Pendell said.

Weaber added: “This is an opportunity for people to get more creative and thoughtful about their meal plan.”

And Dollarhide said beef is an easy product to repurpose for another meal. “Beef doesn’t have to always be center of the plate; consumers can have (planned leftovers) that let them incorporate beef into another meal,” she said.

As strains on the supply chain have been exposed due to COVID-19 related sickness, Dollarhide said an increasing number of consumers want to make food purchases straight from the farm.

“<a href="https://www.facebook.com/groups/shopkansasfarms/learning_content" target="_blank">Shop Kansas Farms</a>&nbsp;is an example of how producers are connecting directly with consumers and there is a chance to give them insight into the food supply chain,” she said. Shop Kansas Farms is a Facebook group that connects farmers with buyers from across the state.

“This really is giving those involved in agriculture a great opportunity to connect with consumers.”

McPherson announces 4th of July celebration

As drivers return to the roads, new AAA research shows why safety may not be top of mind

WICHITA&nbsp; – After three months of staying at home, AAA warns motorists against falling back into dangerous driving habits. As economies reopen and more drivers get back on the road, new research from the AAA Foundation for Traffic Safety shows why motorists may not be as focused on good driving behavior when they get behind the wheel.

The latest AAA Traffic Safety Culture Index finds drivers who have been in at least one crash in the past two years are significantly more likely to engage in risky behaviors like speeding or texting, even when they think the police may catch them.

“The frequency of drivers in the United States engaging in improper behavior is too high. While drivers acknowledge that certain activities behind the wheel, like texting, are dangerous, some do them anyway,” said Shawn Steward, AAA Kansas spokesman. “We need to be aware of the serious consequences of engaging in these types of dangerous driving behaviors and change course.”

The Foundation’s annual Traffic Safety Culture Index (TSCI, which highlights the gap between drivers’ attitudes and their reported behaviors, found&nbsp;that drivers perceive distracted, aggressive and impaired driving as dangerous. Yet many of them admit to engaging in at least one of these exact behaviors in the 30 days before the survey. The numbers were even higher for those involved in a recent crash:&nbsp;&nbsp;

•50% of those involved in a recent crash admit to&nbsp;talking on a hand-held device while driving&nbsp;in the past month vs. 42% not involved in a crash. 

•43% of those involved in a recent crash admit to&nbsp;texting while driving&nbsp;in the past month vs. 27% not involved in a crash. 

•39% of those involved in a recent crash admit to&nbsp;running a red light&nbsp;in the past month vs. 30% not involved in a crash

This data shows that people are not altering their behavior even when it has resulted in a crash.

Of all dangerous driving tasks, drivers dubbed these two&nbsp;extremely or very dangerous:

•Driving when so tired, it was hard to keep your eyes open (96%). 

•Driving while typing or sending a text message or an email (96%)

Yet these same drivers text when behind the wheel, even believing there is a risk of getting caught by police for reading (43.7%) or typing (42.7%) a text message.&nbsp;

Drivers engage in some dangerous behaviors less often It’s not all bad news. Compared with 2018 findings, drivers reported they are engaging in some dangerous behaviors&nbsp;less frequently. Drivers who reported talking on a hand-held cell phone saw the most significant decrease, down from 52.1% to 43.2%, while drowsy driving and texting both fell by 3 percentage points.

“If you point to the dangerous driving behaviors of others that you sometimes do yourself, then you are the problem,” said Jake Nelson, AAA’s director of traffic safety advocacy and research. “I’m encouraged to see a slight shift toward safer driving behaviors, but we have more work to do. Stay focused on driving. This is a must.”

AAA recommends these safety tips to keep in mind.

Don’t drive “Intexicated.”&nbsp;Stow your smartphone away, turn it to airplane mode, or activate call/text blocking features like Apple’s Do Not Disturb. In 2019, AAA launched a new, multi-year initiative “Don’t Drive Intoxicated, Don’t Drive Intexticated”, aimed at making texting and driving as socially unacceptable as drinking and driving. The public is invited to take the Don’t Drive Intexticated pledge. Visit&nbsp; www.aaa.com/dontdrivedistracted&nbsp;to join this lifesaving effort.

Slow down.&nbsp;Drivers tend to overestimate time saved by speeding. You’d have to travel 100 miles to save roughly 5 minutes, moving at 75 mph instead of 70 mph. Speed kills and isn’t worth the cost.

Stay alert. Stop driving if you become sleepy because you could fall asleep at any time. Fatigue impacts reaction time, judgment, and vision, causing people who are very tired to behave in similar ways to those who are drunk.

Only drive sober.&nbsp; If you consume marijuana, alcohol, or use potentially impairing prescription medications, then don’t drive.&nbsp; And if you’re going to drive, then don’t consume these substances. If you are taking prescription medications, visit&nbsp;Roadwise Rx&nbsp;to learn if they can impair driving.

The annual TSCI identifies attitudes and behaviors related to traffic safety. The survey data are from a sample of 2,714 licensed drivers ages 16 or older who reported driving in the 30 days before the survey, which was administered between Sept. 6 and Oct. 8, 2019. <h2>As drivers return to the roads, new AAA research shows why safety may not be top of mind</h2>WICHITA&nbsp; – After three months of staying at home, AAA warns motorists against falling back into dangerous driving habits. As economies reopen and more drivers get back on the road, new research from the AAA Foundation for Traffic Safety shows why motorists may not be as focused on good driving behavior when they get behind the wheel.The latest AAA Traffic Safety Culture Index finds drivers who have been in at least one crash in the past two years are significantly more likely to engage in risky behaviors like speeding or texting, even when they think the police may catch them.“The frequency of drivers in the United States engaging in improper behavior is too high. While drivers acknowledge that certain activities behind the wheel, like texting, are dangerous, some do them anyway,” said Shawn Steward, AAA Kansas spokesman. “We need to be aware of the serious consequences of engaging in these types of dangerous driving behaviors and change course.”The Foundation’s annual Traffic Safety Culture Index (TSCI, which highlights the gap between drivers’ attitudes and their reported behaviors, found&nbsp;that drivers perceive distracted, aggressive and impaired driving as dangerous. Yet many of them admit to engaging in at least one of these exact behaviors in the 30 days before the survey. The numbers were even higher for those involved in a recent crash:&nbsp;&nbsp;•50% of those involved in a recent crash admit to&nbsp;talking on a hand-held device while driving&nbsp;in the past month vs. 42% not involved in a crash. •43% of those involved in a recent crash admit to&nbsp;texting while driving&nbsp;in the past month vs. 27% not involved in a crash. •39% of those involved in a recent crash admit to&nbsp;running a red light&nbsp;in the past month vs. 30% not involved in a crashThis data shows that people are not altering their behavior even when it has resulted in a crash.Of all dangerous driving tasks, drivers dubbed these two&nbsp;extremely or very dangerous:•Driving when so tired, it was hard to keep your eyes open (96%). •Driving while typing or sending a text message or an email (96%)Yet these same drivers text when behind the wheel, even believing there is a risk of getting caught by police for reading (43.7%) or typing (42.7%) a text message.&nbsp;Drivers engage in some dangerous behaviors less often It’s not all bad news. Compared with 2018 findings, drivers reported they are engaging in some dangerous behaviors&nbsp;less frequently. Drivers who reported talking on a hand-held cell phone saw the most significant decrease, down from 52.1% to 43.2%, while drowsy driving and texting both fell by 3 percentage points.“If you point to the dangerous driving behaviors of others that you sometimes do yourself, then you are the problem,” said Jake Nelson, AAA’s director of traffic safety advocacy and research. “I’m encouraged to see a slight shift toward safer driving behaviors, but we have more work to do. Stay focused on driving. This is a must.”AAA recommends these safety tips to keep in mind.Don’t drive “Intexicated.”&nbsp;Stow your smartphone away, turn it to airplane mode, or activate call/text blocking features like Apple’s Do Not Disturb. In 2019, AAA launched a new, multi-year initiative “Don’t Drive Intoxicated, Don’t Drive Intexticated”, aimed at making texting and driving as socially unacceptable as drinking and driving. Stop driving if you become sleepy because you could fall asleep at any time. Fatigue impacts reaction time, judgment, and vision, causing people who are very tired to behave in similar ways to those who are drunk.Only drive sober.&nbsp; If you consume marijuana, alcohol, or use potentially impairing prescription medications, then don’t drive.&nbsp; And if you’re going to drive, then don’t consume these substances. If you are taking prescription medications, visit&nbsp;Roadwise Rx&nbsp;to learn if they can impair driving. Always wear your seat belt.The annual TSCI identifies attitudes and behaviors related to traffic safety. She said more than 700 rain gauges are located in neighborhoods throughout Kansas, but more are needed. “Ideally, we might have one on every block to capture differences that a storm might produce across the state,” Knapp said.

Sometimes, Knapp noted, a storm can dump varying amounts of rainfall from one side of a town to the other – and sometimes even from one side of a street to the other. The CoCoRaHS network relies on citizens using a calibrated gauge, often located in their own yard, to report rainfall in their area.

“By deploying additional rain gauges and getting people to report those observations, we get a better picture of what is happening with a storm,” she said. “If people are interested, it’s a very good way to get involved with monitoring the weather.”

MANHATTAN – American’s blossoming interest in gardening and buying local foods is reflected in the publications that they are accessing through the K-State Research and Extension bookstore.

In May, the three publications downloaded most often include the&nbsp;<a href="https://www.bookstore.ksre.ksu.edu/pubs/S51.pdf" target="_blank">Kansas Garden Guide</a>&nbsp;(7,626 downloads,&nbsp;<a href="https://bookstore.ksre.ksu.edu/pubs/MF3138.pdf" target="_blank">Food Safety for Kansas Farmers Market Vendors</a>&nbsp;(2,389) and the&nbsp;<a href="https://www.bookstore.ksre.ksu.edu/pubs/MF315.pdf" target="_blank">Vegetable Garden Planting Guide</a>&nbsp;(2,046).

All three publications are available for free online. Together, they were downloaded 12,061 times in May, better than one-third of the more than 31,500 downloads of the top 25 publications during the month.

There are more than 1,700 publications available online from the bookstore, according to the organization’s publishing manager, Mark Stadtlander. The topics covered include agriculture, food safety, family resources, child development, 4-H, natural resources, gardening and more.

The Kansas Garden Guide, originally created in 1993 and revised in 2010, has long been a favorite. It contains information on growing vegetables and herbs as it relates to soil, compost, seeding, watering, pest control, container gardening, extending the season, harvesting and storing. The 80-page publication is printed in color.

Kansas Garden Guide tops most-read list of K-State publications

MANHATTAN – It may not quite yet be the summer’s Dog Days, but it’s getting plenty hot and humid across most of Kansas.

Hot enough, in fact, that assistant state climatologist Mary Knapp says most of us need to be deliberate about protecting ourselves from heat’s ill effects.

“Keep in mind that you want to start hydrating throughout the day,” said Knapp, who works at Kansas State University. “Be sure you have water available throughout the day and continue to drink as needed. Once you feel thirsty, you’re actually well on your way to dehydration.”

It’s a good idea to hydrate well the night before a planned activity, Knapp said.

“When you’re getting ready for an afternoon boating or biking, make sure that you’ve hydrated yourself through the night and into the morning before you start your outdoor activities,” she said.

Through the early part of June, average temperatures in Kansas have been as much as 12 degrees above normal, according to Knapp. The outlook for the rest of June is for above normal temperatures, while the summer (June-August) outlook issued on May 21 favors cooler than normal temperatures. The summer outlook will be updated later this month, she said.

As temperatures rise, “children and older adults may be less aware of dehydration,” Knapp said. “That can be particularly difficult with children as they may not be able to vocalize that they are thirsty or that they are feeling uncomfortable or dehydrated. You’ll need to watch that, as well.”

Knapp said people of all ages need to be aware of the signs of heat stress.

“You might start sweating profusely, or become dizzy and uncomfortable,” she said. “Or, you might get heat cramps where your muscles start cramping up, which is a more severe indication of heat stress. The real dangerous point is if you stop sweating because it’s a sign that your system is completely overloaded. At that point, you need emergency attention.”

When considering outdoor activities, Knapp encourages Kansans to look for venues where they can get out of the heat, including shaded park areas or an open-air mall “where you can walk but still maintain social distancing.”

“Not everybody has access to air conditioning,” she said. “So you need to look for alternative ways of reaching a cooler environment. The other thing is to plan on doing intensive activities very early in the morning before the heat has a chance to build up, or later in the evening such as between 7 p.m. and 8 p.m.”

Knapp also suggests picking a sunscreen with the highest sun protection factor (SPF) available.

“Be sure that you apply sunscreen before you go out so that your skin has time to absorb it and develop the protective layer that you’re interested in,” she said. “It’s also a good idea to repeat the application throughout the day, because it will wear off. Preventing sunburn will have the added benefit of allowing your body to better respond to the hotter temperatures.”

Knapp said it’s always a good idea to be aware of local weather forecasts, not only for heat warnings, but also to be aware of severe thunderstorms, lightning or tornado warnings.

Dog Days? Not yet, but heat precautions should be high priority

The Dane G. Hansen Foundation, in partnership with the Lovewell Institute for the Creative Arts, is pleased to announce two virtual high school summer theater workshops this summer.

Lovewell artists were originally scheduled to offer seven in-person workshops this summer, the third year of Lovewell Kansas. Due to the Coronavirus, the in-person workshops were canceled for the safety of our students. But creativity is not defined by in-person events!

The Foundation and Lovewell are excited to announce 2 online Lovewell Workshops (one week each) for NW Kansas high school students (those exiting 8th&nbsp;grade through graduating seniors).&nbsp;

Workshops dates are: June 22-26; and July 6-10, from 1pm to 4pm online. Students can participate in one or both.

Students will work with Los Angeles artists (and Kansas workshop favorites) Amber Allgyer and Eric Flemons to create a mini-musical or a themed song cycle. Other artists from around the globe are likely to pop in as well.

The final video product will be presented virtually and also be part of the Lovewell summer of 2020 around the world video.

The First Amendment has had a landmark year — and it’s only June. The devout invoke&nbsp;<a href="https://www.religiousfreedomcenter.org/religious-freedom-in-the-time-of-covid-19/" target="_blank">religious freedom</a>&nbsp;while debating whether it is appropriate to ban in-person religious services during the COVID-19 pandemic. The socially conscious&nbsp;<a href="https://www.freedomforum.org/2020/06/02/floyd-protests-powered-by-freedoms-of-assembly-petition/" target="_blank">assemble</a>&nbsp;to protest en masse against police brutality and to affirm that Black lives matter. Journalists risk their safety to exercise the right of the press to report on matters of public interest, even though they risk&nbsp;<a href="https://www.freedomforum.org/2020/05/29/arrest-of-cnn-crew-violates-first-amendment/" target="_blank">wrongful arrest</a>&nbsp;or&nbsp;<a href="https://www.nytimes.com/2020/05/30/us/minneapolis-protests-press.html" target="_blank">assault</a>&nbsp;by officers in riot gear.

Progressives and conservatives alike have taken to the streets and courts to advocate for their dreams for the nation’s future. But in the midst of this national reckoning about our failure to safeguard liberty and justice for all — when people across the religious, political and ideological spectrum are exercising their rights — everyone should acknowledge one important fact: we are all protected by the First Amendment because of the struggle for Black liberation.

When the Bill of Rights was adopted in 1791, the First Amendment applied only to the federal government. States were not obligated to enact laws to protect the fundamental freedoms of religion, speech, press, petition or assembly.

In fact, some states had constitutions that&nbsp;<a href="https://www.mtsu.edu/first-amendment/article/801/established-churches-in-early-america" target="_blank">abridged</a>&nbsp;these freedoms. For example, four of the 13 original states — Connecticut, Georgia, Massachusetts and New Hampshire — provided some sort of direct aid to churches, which would today constitute a violation of the establishment clause of the First Amendment. Massachusetts was the last state to disestablish in 1833.

Even after 1833, the First Amendment did not protect religious freedom — or any of the five freedoms — for all. White Americans continued to deny enslaved Black people the “unalienable rights” touted by the Declaration of Independence and the U.S. Constitution. Despite lofty rhetoric that “all men are created equal,” the country violated the rights and dignity of entire classes of people on the basis of race.

Our nation confronted its hypocrisy, in part, during and after the Civil War. Between 1865 and 1870, states ratified three Constitutional amendments, known as the&nbsp;<a href="https://constitutioncenter.org/learn/educational-resources/historical-documents/the-reconstruction-amendments" target="_blank">Reconstruction Amendments</a>, which recognized certain fundamental rights for all which had previously been reserved for white Americans. The 14th&nbsp;Amendment, adopted in 1868, guaranteed “due process of law” and “equal protection of the laws” to “any person.”

It is the 14th&nbsp;Amendment — a direct outcome of the Civil War and the ongoing struggle for Black liberation — that ultimately guaranteed First Amendment protections across the entire nation. Through a legal process known as&nbsp;<a href="https://www.law.cornell.edu/wex/incorporation_doctrine#:~:text=The%20incorporation%20doctrine%20is%20a,applies%20both%20substantively%20and%20procedurally." target="_blank">incorporation</a>, the U.S. Supreme Court extended the reach of the First Amendment through the due process clause of the 14th&nbsp;Amendment. In a series of cases starting in 1925, the court affirmed that each of the five freedoms applies at both the state and national level.

In other words, Americans today who cherish and exercise their First Amendment rights without fear of state intrusion owe a debt of gratitude to the 14th&nbsp;Amendment — and by extension to the struggle for Black liberation.

But as civil rights activist and poet&nbsp;Audre Lorde&nbsp;<a href="https://www.blackpast.org/african-american-history/1982-audre-lorde-learning-60s/" target="_blank">declared</a>, “Revolution is not a one-time event.” In addition to the Civil War, the adoption of the 14th&nbsp;Amendment and the process of incorporation — each of which functioned as new American revolutions — we needed the Civil Rights Movement of the mid-20th&nbsp;century to continue expanding the protections of the First Amendment. As First Amendment expert&nbsp;Robert O’Neil&nbsp;<a href="https://www.freedomforuminstitute.org/first-amendment-center/topics/freedom-of-assembly/civil-rights-first-amendment/" target="_blank">attested</a>&nbsp;in 2002, “It is likely that the same First Amendment doctrines would not have developed at the same rate and with the same force or conviction were it not for the civil rights movement.”

And the revolution continues today. While the First Amendment now applies to all in law, it does not apply equally in action. In just the last month, we have seen police use&nbsp;<a href="https://www.cnn.com/2020/06/06/us/police-excessive-force-us-protests/index.html" target="_blank">excessive force</a>&nbsp;against unarmed protestors who decry racism, and the deaths of&nbsp;<a href="https://www.nytimes.com/2020/05/31/us/george-floyd-investigation.html" target="_blank">George Floyd</a>,&nbsp;<a href="https://www.nytimes.com/2020/06/04/us/breonna-taylor-black-lives-matter-women.html" target="_blank">Breonna Taylor</a>&nbsp;and&nbsp;<a href="https://www.rollingstone.com/culture/culture-news/tony-mcdade-shooting-death-tallahassee-1008433/" target="_blank">Tony McDade</a>&nbsp;— all three of whom were Black Americans killed by police — whereas heavily armed white Americans who&nbsp;<a href="https://www.npr.org/2020/05/14/855918852/heavily-armed-protesters-gather-again-at-michigans-capitol-denouncing-home-order" target="_blank">threatened officials</a>&nbsp;at the Michigan Capitol faced no violence.

The First Amendment risks being an empty promise until it protects all in law and in practice. As Martin Luther King Jr. famously&nbsp;<a href="https://www.africa.upenn.edu/Articles_Gen/Letter_Birmingham.html" target="_blank">explained</a>, “We are caught in an inescapable network of mutuality, tied in a single garment of destiny. Whatever affects one directly, affects all indirectly.” Once again, those who lead the struggle for Black liberation are pushing our country to live up to its highest ideals — and that benefits us all. Non-Black Americans who want to protect the five freedoms of the First Amendment would do well to join cause with movements for Black liberation.

The board’s mission is to impartially resolve disputes between taxpayers and taxing authorities. It also reviews tax exemption decisions made by local governments, grievances resulting from technical errors and corrects tax inequities.

The mission of the Kansas Corporation Commission is to protect the public interest through impartial and efficient resolution of all jurisdictional issues. The agency shall regulate rates, service, and safety of public utilities, common carriers, motor carriers, and regulate oil and gas production by protecting correlative rights and environmental resources.

The water authority advises the governor, the Legislature and the director of the Kansas Water Office (KWO) on water policy issues — including the approval of the Kansas Water Plan and revisions, federal contracts, administration regulations and legislation proposed by the KWO.

The Pooled Money Investment Board (PIMB) provides investment policy for state idle funds. They invest the money available from the State General Fund and the hundreds of other state funds deposited with the State Treasurer. The PIMB also provides investment management services for other state agencies with investment portfolios, such as the Kansas Department of Transportation and Health Care Stabilization funds.

On June 13, 1967, President Lyndon B. Johnson nominated Solicitor-General Thurgood Marshall to become the first black justice on the U.S. Supreme Court.

In 1842, Queen Victoria became the first British monarch to ride on a train, traveling from Slough (slow as in cow) Railway Station to Paddington in 25 minutes.

In 2005, a jury in Santa Maria, California, acquitted Michael Jackson of molesting a 13-year-old cancer survivor at his Neverland ranch. The Supreme Court warned prosecutors to use care in striking minorities from juries, siding with black murder defendants in Texas and California who contended their juries had been unfairly stacked with whites.

Ten years ago: Gary Faulkner, a Colorado construction worker, was detained in Pakistan while on a one-man mission to hunt down Osama bin Laden (Faulkner was released 10 days later). "Memphis," the rhythm 'n' blues musical set in the American South in the 1950s, won four Tony Awards, including best musical; "Red," about painter Mark Rothko, won best play and five other honors. Jimmy Dean, a country music legend and an entrepreneur known for his sausage brand, died in Richmond, Virginia, at age 81. The final "Annie" (formerly "Little Orphan Annie") comic strip ran in fewer than 20 newspapers, ending with a cliffhanger.

Five years ago: Hillary Rodham Clinton formally kicked off her presidential campaign with an outdoor rally in New York where she asked supporters to join her in building an America "where we don't leave anyone out, or anyone behind." To scientists' relief and delight, the Philae spacecraft that landed on a comet the previous fall "woke up" and communicated with Earth after seven long months of silence.

One year ago: The United States blamed Iran for suspected attacks on two oil tankers near the strategic Strait of Hormuz, denouncing what it called a campaign of "escalating tensions"; the U.S. Navy rushed to assist the vessels, including one that was set ablaze. President Donald Trump said press secretary Sarah Sanders would leave the post at the end of the month. The Toronto Raptors captured Canada's first major title in 26 years by beating the two-time-defending-champion Golden State Warriors 114-110 to wrap up the NBA championship.
