MANHATTAN — Now that Halloween is here, many folks are already thinking about holiday entertaining for Thanksgiving.&nbsp;

After two years of limited celebrations, some families are looking to bring back traditional large group gatherings, making this the perfect time to make sure the kitchen is ready, said food scientist Karen Blakeslee, who is also coordinator of the&nbsp;<a href="https://www.rrc.k-state.edu/" target="_blank">Rapid Response Center</a>&nbsp;at Kansas State University.&nbsp;&nbsp;&nbsp;

“First, examine your kitchen equipment and make sure your appliances are working right,” Blakeslee said. &nbsp;

She recommends that people place an oven thermometer inside their oven.

“The oven thermometer will give you a better idea of the actual oven temperature so that you can be assured the food is baked properly,” Blakeslee said.&nbsp;

Also with small appliances, she encouraged cooks to test them now to make sure they work correctly and that there is enough space in the kitchen to use them when preparing the full Thanksgiving meal. &nbsp;

“Check to make sure your kitchen has the electrical power to handle all the appliances you’ll need to run when cooking,” Blakeslee said. &nbsp;

To help with the space challenges of holiday meal prep, Blakeslee said cooks should prepare and freeze items ahead of time.&nbsp;

“If you are going to have dinner rolls, make them now and then wrap them tightly and place them in the freezer. Then on the day of the meal, pop them in the microwave to warm them up,” Blakeslee said. &nbsp;

She said baked goods begin to go stale as they come through the cooling process. Reheating them from the freezer reverses that process and freshens them up.&nbsp;

“Fruit pies, baked or unbaked, will survive better in the freezer than other types of pies,” Blakeslee said. “Again, it is a good idea to refresh them in the oven after thawing.”&nbsp;

To help with the demands on the oven, Blakeslee advises families divide up the holiday meal cooking.&nbsp;

“One suggestion is for the host to make the main course and then have everyone else bring a side dish,” she said.&nbsp;

After the meal is complete, it is important to keep the two-hour food safety rule in mind.&nbsp;

“Don’t let hot or cold food sit at room temperature for more than two hours, otherwise food will be in the temperature danger zone between 40 and 140 degrees where bacteria really thrive,” Blakeslee said.&nbsp;

When preparing a holiday turkey, Blakeslee shared the following tips:&nbsp;

●Ideally, frozen turkeys should be thawed in the refrigerator, estimating 24 hours of thaw time for every four to five pounds. She suggests adding one or two extra days to be sure it is thawed.

●If thawing turkey in cold water, the bird must be submerged. Change water every 30 minutes. Plan on a minimum thawing time of 30 minutes per pound of turkey.

●Do not rinse the turkey before putting it in the oven. It is unnecessary and risks spreading contamination in the kitchen.

●Use a food thermometer to check the turkey and make sure it is registering at 165 degrees. Check the temperature in several locations such as the thickest part of the breast and the innermost part of the thigh and wing.

●It is best to let the cooked turkey rest for 10-20 minutes to allow the juices to circulate for a better moisture level and flavor.&nbsp;

Ike's Virtual Book Club: 'How Ike Led' tonight

On April 10, 37-year-old Ryan McElroy, Salina, Kan., killed 22-year-old Blythe Boness of Alliance in a vehicle crash on Highway 2 east of Alliance.

"As we know on April 10, 2022 in the afternoon, victim in this case, Blythe Boness, was traveling eastbound on Highway 2 in Box Butte County, Nebraska," Edward Vierk of the Nebraska Attorney General's Office said in Box Butte County District County today. "Blythe had just dropped off her fiancé Bailey to pick up a used truck that would be their future ranch truck. Blythe and Bailey were putting the pieces in place for their life together as husband and wife on a ranch. In fact, at the time of the crash that would soon happen, Bailey was following Blythe approximately two and a half miles behind her in this new used truck that they had purchased. At the time, Blythe was driving her Ford Escape SUV. In her vehicle, she had no other human passenger. She did have her and Bailey's four companions, their loyal dogs, not all of which would survive the upcoming event. And at the same time, the defendant, Mr. McElroy was traveling westbound on Highway 2. He was alone in his Camaro. At that time, he was driving on a suspended Kansas license and in fact, in Kansas, he did have a warrant out for his arrest. He had been drinking that morning, but he'd run out of alcohol and got in his car to go buy more alcohol. At approximately mile marker 92.5 in Box Butte County, Mr. McElroy crossed the center line and began driving in the eastbound lane of Highway 2. This was the lane that Blythe was properly driving in. Blythe made an evasive maneuver to try to avoid Mr. McElroy's oncoming car. She moved towards the north shoulder rather than trying to endanger herself by going into a ditch and the defendant then made another maneuver, returning to his lane, and he struck Miss Boness vehicle. As a result of this collision, Miss Boness was ejected and was killed." Boness was not using a seat belt at the time of the crash and both vehicles were traveling slightly above the 65 MPH speed limit. McElroy hit Boness at approximately 73 MPH. McElroy was extracted from his vehicle by first responders and flown to Regional West Medical Center in Scottsbluff for treatment. His Blood Alcohol Content was .235 grams per 100 ml of blood. McElroy was previously convicted of a DUI in Gage County on June 12, 2008 and another DUI in Salina, Kansas that year.

"In addition to this trauma, Blythe's fiancee, who I'd stated earlier had been following about two and a half miles behind, did arrive at the scene," Vierk said. "The worst nightmare possible he finds his fiancee underneath her vehicle, Bailey attempted to lift the vehicle off of her, but obviously could not. And he's still wracked with guilt that he was unable to do so. Mr McElroy is actions and choices that day provided lives, family and friends with the worst day of their lives. Mr. McElroy however his series of bad choices took Blythe away from her mother, her father, her fiancé, her brother's, the rest of her family or friends in her community. When we look around this courtroom, it's clear the damage to the community that Mr. McElroy has wrought with his bad and selfish choices. Blythe's mother Teresa didn't have an easy time giving birth to her daughter, she's been affected by this. She was on five months bed rest when she carried Blythe with every doctor telling her she was going to lose the baby. Despite the odds Blythe was healthy baby and she lived a short life that enlightened the lives of all those around her."

"Your Honor, this is a sad case," McElroy's attorney Stacy Bach said. "When I took this case on, I knew I wasn't going to be popular in the community. But, I had a duty and obligation and that's what we do as defense counsel, we represent our clients to the best of our ability. Mr. McElroy...after he got out of the hospital, and after I had an opportunity to meet with him, and after he was able to bond out of jail...he and I came into my office and we sat down. As defense counsel, it's my job to review every ounce of the evidence to review all the transcripts, and help my client make determinations on how to proceed to trial. In reviewing those transcripts and viewing the evidence, it was clear that there was no seatbelt being worn. It was clear there was a high rate of speed on the part of both parties. There were also issues of whether or not Ms. Boness was on her cell phone at the time. There were also issues that were being addressed, instigated by the firm that we intended to hire as expert witnesses, whether or not this was avoidable-- whether or not the evasive actions that she took were inappropriate. And again, those are what defense counsel does. As I sat and talked with Mr. McElroy about that, he said don't do it. I'm not gonna put the family to trial. I'm guilty. I was drunk. I caused the accident. He came into court. This court said, How do you plead? And he said, I plead guilty. He didn't plead no contest, which is what I tell 99% of my clients to do when there's civil litigation potentially. He said I don't care. I caused the accident, I'm absolutely guilty. I think that's what he told the court. This is hard for me. It's hard for Mr. McElroy. It's hard for these people behind me to sit here and listen to this today. But, it's closure. And I hope that this court gives them the closure that they need."

Bach then spoke about McElroy's criminal past.

"Mr. McElroy when he turned 29, I think he kind of had an epiphany," Bach said. "And that's when, for the most part, his criminal record left. He had a couple of things...no proof of insurance in 2018, and then got sideways with a girlfriend in 2020. And then there was this. The two prior convictions, although valid, are all right on the cusp of not being usable offenses anymore. They're 14 and a half years. In Nebraska, it's a 15 year look back period. Doesn't discount it. They're there. It's an&nbsp;enhanceable offense. And that's what the courts done and my clients not objecting to that. When we look through here, your Honor, I know you have a range that you can do a range from one to 50 years. I'm asking for the opportunity for Mr. McElroy to be able to get out at some point, put what he has learned to use, whether that's to go to schools and talk about driving and drinking and telling kids what he did. The court has the opportunity to put two numbers out there bottom to top. And so what we're asking for is at least somewhere in the middle for the bottom number and top numbers up to the discretion of the court. I know this, again, has been hard on everyone. But I appreciate that Mr. McElroy stood up, took responsibility for his actions in this case, and didn't drag this family through anything more than what they've already suffered."

"I just wrote this today," McElroy said "For six months. I've thought about what to say today and just have so many thoughts and everything is like a snowball and it just melted together. I had to say something today because I didn't want to feel like a coward. I don't know how to say what I want to say, I cannot imagine the grief that I put everyone through. This is one of those things that unless it actually happens to you, you will never thoroughly understand how it feels. Nothing I say will return what's lost or heal their broken hearts. I've had the privilege today to read some of the letters. I feel the sadness radiating from these letters. I can't fault anyone for feeling the way they do about me, I would too in their shoes. One letter that stuck out to me had a different message. One that said they hope my heart and mind find a different path. And I hope so. I'm sorry is not enough. No words will ever be enough. But, still I'm sorry. In the end, I had a choice that day to drink and drive. I wish more than anything that I could go back and do better."

"This is just a very difficult, tragic case," Box Butte County District Court Judge Travis P. O'Gorman said. "I wish there was something magical that I could say today that would take away all the pain and hurt and anger in this room. And I've been doing this long enough. I know that that's not possible for me to do.&nbsp;All I can say is the people here from Miss Boness, is that you have my most sincere condolences and I'm very sorry for your mom. We've all heard Mr. McElroy, you do have a concerning record to prior DUI offenses, one of which had a child in the vehicle, some theft offenses as well as two prior domestic offenses, which all contribute to the present report finding that you are high risk to reoffend. As noted by the prosecution going to treatment on multiple occasions, but still continuing to drink and drive. You admit and your criminal history is in your words fueled by alcohol. And that's what the evidence in this case shows." McElroy was sentenced to a term of &nbsp;"not less than 45 years, not more than 50 years" in the Nebraska State Prison. McElroy was credited for the 108 days already served. He will be eligible for parole in 22 1/2 years.

McElroy was also ordered to pay the cost of the prosecution and his driver's license was revoked for 15 years. His mandatory discharge will be in 25 years.

Essays by 35 Salina and Saline County residents and 24 brief vignettes from other residents are featured in a new book published by Salina Arts &amp; Humanities.

Many and Varied Paths: Real-Life Stories from the Kansas Plains, a Mennonite Press publication, is the brainchild of Salina Arts &amp; Humanities commissioner Mike Durall who was responding in part to the department’s mission “to change lives and build community.” He asked the contributors to think about a life-changing moment that helped shape who they are today.

“Each day, we encounter friends, family members, colleagues, and strangers as we go about our normal routines. Yet we rarely know what is truly in their hearts and souls,” Durall said.

The stories are a glimpse into the writer’s world.

A special reading of selected essays and a discussion with the authors and editor is planned for 7 p.m. Nov. 16 in the lobby of the Smoky Hill Museum, 211 W. Iron Avenue.

The contributors come from diverse backgrounds and share personal stories about challenges, triumph, loss, and perseverance. The writing styles each reflect the author’s voice creating an authentic collection of voices from across the region.

Regarding his aspirations as editor of the book Durall offered, “I hope this book will encourage us to look kindly upon one another with compassion and understanding because we are all wayfarers on life’s uncertain journey.”

Private contributions covered the production costs, and city funding was used for editorial expenses. Copies are available at the Salina Public Library and other publicly accessible spaces such as waiting rooms, school libraries, non-profit agencies, and other community venues. The books are also for sale at the Smoky Hill Museum Store.

TOPEKA&nbsp;–&nbsp;The Kansas Main Street program announced Monday it is seeking new communities to join the program in 2023. 

On Nov. 14, at 10 a.m., the program will host a virtual application workshop for communities interested in the program.

“My administration rebuilt economic development tools like the Kansas Main Street Program, and it has since been a crucial part of preserving and growing Kansas downtowns,”&nbsp;said Governor Laura Kelly.&nbsp;“I encourage more Kansas communities to join this program and strengthen their economy.”

Kansas Main Street provides technical assistance and support for communities working to revitalize their downtown area by focusing on four points — economic vitality, design, promotion, and organization.&nbsp;

Communities wishing to submit applications will be required first to attend the virtual application workshop, which will explain the Main Street Approach and the process for successfully completing the application.

Applications for the Kansas Main Street program will open on Dec. 5 and close on Feb. 3, 2023. Applications will be reviewed in February, with new communities announced in March.

“Since Governor Kelly brought the Kansas Main Street program back in 2019, ten communities have been added, bringing the total number of designated communities to 35,”&nbsp;Lieutenant Governor and Secretary of Commerce David Toland said.&nbsp;“These Kansas communities once again have the resources and tools they need to enhance the quality of life and breathe new life into their communities and historic commercial districts.”

Benefits of earning designation as a Kansas Main Street community include:&nbsp;

●Comprehensive technical assistance from the state and national programs to further economic development downtown.

Kansas Main Street Program hosting application workshop

On Monday, work began for a bridge replacement on Shipton Road and a bridge removal on Granville Road, just east of Kansas Highway 143 in Saline County.

During construction, Shipton Road and Granville Road will be closed at the location where the contractor is actively working on the bridge. Local traffic will follow a signed detour via N. Ohio Street and Interstate 70.

L &amp; M Contractors Inc. of Great Bend is the prime contractor and has scheduled this $668,194 project to be completed by May 2023, weather permitting.

Monster trucks coming to Tony's Pizza Events Center in January

In celebration of Veterans Day and in recognition of the unique challenges faced by many veterans and the need to connect them to resources available to assist them and their families, a proclamation supporting Operation Green Light for Veterans will be presented to the Saline County Commission at tomorrow's 9 a.m. meeting.

If adopted, various Saline County buildings will be illuminated green through the 13th as part of Operation Green Light to shine a light on the needs of veterans.

"Shining a green light is one small way we can let our veterans know that they are seen, appreciated, and supported," said Bob Vidricksen, Saline County Commissioner and Army veteran. "I encourage everyone to join us in expressing our profound gratitude for the sacrifices and contributions our veterans and their families made on the battlefield and at home."&nbsp;

In addition to lighting county buildings, residents and businesses are encouraged to participate by simply changing one light bulb in their house to a green bulb. This can be an exterior light that neighbors and passersby see or an interior light that sparks a conversation with friends.&nbsp;

While this event is focused around the week of Veterans Day (Nov. 7 -13th), participants are encouraged to continue shining the light year-round. Residents can share their participation on social media using the hashtag #OperationGreenLight.&nbsp;

Operation Green Light is a new national collaborative initiative of the National Association of Counties (NACo) to support military veterans.

A local man was arrested on multiple requested charges after an incident at a north Salina convenience store Saturday afternoon.

Salina Police Captain Paul Forrester said this morning that officers were sent to Casey's General Store, 500 N. Ohio Street, at approximately 3 p.m. for the report of a male subject with a gun, knife, and hammer. They made contact with Carlito Morales, 32, of Salina, who had two knives and a hammer.

Officers also made contact with Morales' 55-year-old girlfriend, who told them that while she and Morales were in the vehicle, he brandished a hatchet and demanded her car keys. She was able to get out of the car and called the police. Morales then went into Casey's, Forrester said.

When officers attempted to arrest Morales, a physical altercation ensued and Morales allegedly kicked one of the officers. At one point during the altercation, Morales was tased and he attempted to take the taser away from the officer, Forrester said. Morales was believed to be under the influence of drugs at the time of the incident, he added.

Morales was finally arrested on the following requested charges, Forrester said.

A desire to learn a new photography technique has led to a gallery exhibition for Salinan Tanner Colvin.

Weecha, a blend of photography and videography opened today in The Gallery at Kansas Wesleyan University.

The exhibition features Wichita War Dancer, a member of the Tohono O’dham and Ponca nations who has been performing the war dance for several years. Wichita War Dancer has traveled across the world, performing and educating groups about his culture and its history. In 2021, he earned a world championship honor for his war dance performance.

A public exhibition reception is scheduled for 6-8 p.m. Dec. 2 and will include a performance by Wichita War Dancer at 6:30 p.m. in Fitzpatrick Auditorium.

Colvin, a 2011 graduate of Kansas Wesleyan, said the exhibition evolved from his desire to learn a new photography technique: shutter drag. 

Colvin explained that shutter drag both freezes and blurs motion.

"So he started out and I opened the shutter. A flash went off and then he had 20 to 30 seconds to move around. Once he moved around, that's where you get the kind of blurry motion I call 'watercolor.'"

After finding a YouTube video on how to use shutter drag, Colvin began looking into who he might know who danced, leaning more toward traditional dance, such as ballet. Colvin said he happened to stumble across Wichita War Dancer on a Kansas photography Facebook group and contacted him about being the subject of a photo shoot using shutter drag. The two exchanged several emails and phone calls and Wichita War Dancer agreed to the photo shoot.

The two met at Salina's Stiefel Theatre in early 2020 and Colvin spent approximately six hours making photos while Wichita War Dancer danced.

Colvin said he was quite pleased with how the photographs turned out.

"The name of the show, Weecha, is a Native American term that means 'to be proud of significant accomplishment,'" Colvin said. "This is my first show since college, so this space is a little different to me. Usually my stuff is very 'shoot it and get it done' journalism."

While the two were busy with the photo shoot, they talked about what would happen next with the photos.

"I had wanted to do some smaller prints to show off his regalia, because in these bigger ones, you don't really get to see what he is wearing. A lot of it is homemade," Colvin said.

From there came the idea of also including a video of Wichita War Dancer dancing.

"I figured that if people can't be here on Dec. 2 to see him dance, they might not get the motion and emotion that he has in this dance, so that's where the video came into play," Colvin said.

The video, which Colvin recorded himself, includes a short interview with Wichita War Dancer.

A Salina man is missing a $1,400 bow and case after a burglary at his residence in the northern part of the city.

The 26-year-old Salina man told police that sometime between midnight and 11 p.m. Saturday, someone entered his residence in the 1200 block of N. 11th Street and stole a Diamond Deploy bow and the hard case it was in, Salina Police Captain Paul Forrester said this morning. 

The bow was gray with orange and gray strings and the case was gray and green.

There were no signs of forced entry, Forrester said.

David Youtsey, 85, of Salina, backed his 2007 Ford Ranger out of his driveway in the 1400 block of Austin Circle, across the street, and into his neighbor's garage and house, Salina Police Captain Paul Forrester said this morning. He then left the scene.

The collision occurred at approximately 11:50 a.m. Friday.

Forrester said an officer located Youtsey driving north on S. Ohio Street, stopped him, and brought him back to the scene. 

The neighbor's house and garage sustained significant damage, Forrester said. The pickup sustained extensive rear-end damage.

Youtsey was cited for failure to report an accident that caused damage, Forrester said.

●Leaf piles will not be collected if mixed with other debris. Tree limbs and branches will not be collected.

●Don’t rake or blow leaves into the street as this can be a hazard to traffic and is a violation of City Code. Additionally, placing leaves in the street may cause problems for our storm drainage systems.

●Don’t park vehicles directly in front of or behind leaf piles, as this makes collection more difficult for our crew.

●Have your leaves ready for collection on the first day of the schedule for your respective zone.

●There will only be one round of curbside leaf collection in each zone; however, customers may call in to report locations if they feel they may have been missed by the leaf collection crew or when weather conditions or late leaf deposits require additional collection.

Lindsborg Old Mill &amp; Swedish Heritage Museum

LINDSBORG - Two grants from the McPherson County Community Foundation will help Lindsborg Old Mill and Swedish Heritage Museum to make critical repairs to the Old Mill.

“We’re thankful that the foundation is recognizing the value of the mill and museum to this community and its heritage,” said Caroline de Filippis, Community Development Director of the museum. “These are valuable steps to making sure the mill stays strong.”

More than $100,000 of estimated repairs are urgently needed to preserve and protect the Smoky Valley Roller Mills, which in 2023 will celebrate 125 years since its construction.

This work includes repairing brick and mortar on exterior walls, protecting the mill’s foundation with better water remediation and drainage, and replacing deteriorated boards in the scale house that were a safety hazard to guests.

The McPherson County Community Foundation awarded $10,000 in a general grant, as well as a $10,000 Lindsborg David Nutt Grant, named after the Lindsborg resident who passed away in 2017 and whose namesake provides grant funds for charitable causes located in Lindsborg.

The museum has also recently applied for a Heritage Trust Fund (HTF) grant from the Kansas Historical Society for the mill repairs. The HTF grant requires 20% matching funds, which the $20,000 from the foundation is intended to cover.

On one side we have George Bailey (Jimmy Stewart) who gave up his personal dreams in order to manage a “building and loan” to help his community. On the other side, we have the rich and greedy banker Henry Potter who runs most of the town without compassion. To some extent, they reflect the polar positions in the election we just endured. Will the U.S. be seen as having compassion or be a bastion of selfishness? While we continue to view ourselves as having the most superior economic and governmental model on earth, a series of international studies show that the U.S. is nowhere near the top in nearly any measure of governance, happiness or affluence. Kathleen Frydl, notes in The Conversation how “The U.S. is becoming a ‘developing country’ on global rankings that measure democracy, inequality.” She points to the United Nations Office of Sustainable Development measure of 17 factors, where the U.S. has dropped from 32nd to 41st worldwide, placing the U.S. next to Bulgaria. Countries that continue to rank at the top are Finland, Denmark, Sweden, Norway, Austria and Germany. While we still consider ourselves to be a rich and “developed” country, we have now sunk to a level with countries that are considered “developing countries.” &nbsp; Frydl also notes how The Economist’s Democracy Index 2021 has moved the U.S. down to the level of “flawed democracy.” Again, Norway, New Zealand, Finland, Sweden, etc. lead the 21 countries in the full democracy levels. The U.S. is 26th and in the second group of countries facing serious challenges to their governance. The Organization for Economic Co-operation and Development uses the Gini coefficient, a calculation based on income equality within a nation, with ‘zero’ being equal incomes and ‘one’ reflecting unequal incomes. The U.S. ranks 35th between Lithuania and Bulgaria with a score of 0.49. The U.S. was at 0.43 in 1990, so we have seen an increase in income inequality in the last 30 years. Norway, Finland and Sweden again rank in the top ten for income equality. Many European students who attend U.S. universities come from countries where everyone gets health care. They are puzzled by our unwillingness to provide health care for all Americans. International college students arrive to find much lower standards of living than they had assumed from world media. &nbsp; The Alliance of Democracies Foundation commissioned the Latana polling company to conduct a survey of 50,000 individuals from 53 major countries during February through April of 2021. 44 percent of those surveyed viewed the U.S. as a threat to their democracy. Only 38 percent feared Chinese influence and only 28 percent expressed a fear of Russia. When The Guardian newspaper summarized these results, this large percentage who think the U.S. is a bigger threat to democracy in their country took many by surprise. This perception of America as a threat to democracy has been increasing, with the greatest increases seen in Germany and to a lesser extent in China. European democracies are also generally negative about the United States. “The biggest perceived threat to democracy isn’t foreign election interference, Russian influence, or the power of Big Tech—it’s economic inequality.” When asked about having the right amount of democracy, the citizens of Taiwan, South Korea and China topped the list! To Americans, the Democracy Perception Index 2021 data released was a surprise. South Korea and Taiwan are recognized as having forms of democracy, but mainland Chinese also think that they also have the “right amount” of democracy. In these last weeks we have seen the rapid turnover in British prime ministers without any election, the Italians install their most far right leader since World War II, and the Israelis hold their fifth election in four years. To many Asian cultures, the constant chaos and redirection of these forms of Western democracy are problematic. They want stability, not continuous change.
