K-State’s Blakeslee: Washing hands is an important part of preparing food

MANHATTAN – It’s almost summer…do you know where your&nbsp;food&nbsp;thermometer and ice chest are?&nbsp;

Those are, after all, some pretty important items for one of summer’s favorite activities: outdoor grilling. Kansas State University&nbsp;food&nbsp;scientist Karen Blakeslee said knowing some basic&nbsp;food&nbsp;safety principles will help to keep the party fun for all.&nbsp;

“When it comes to&nbsp;food&nbsp;safety, the No. 1 thing to start with in any kind of cooking situation is washing your hands,” Blakeslee said. “It’s your first line of defense against&nbsp;foodborne bacteria.”&nbsp;

Handwashing is as simple as wetting the hands, rubbing them together with soap for 20 seconds and rinsing them thoroughly.&nbsp;

“It’s so easy to do and by now all of us should really be good at it with everything we have been through the past year,” Blakeslee said.&nbsp;

Other steps to promote&nbsp;food&nbsp;safety, according to Blakeslee, include: ●Clean counters and other prep areas as you go. Clean up drips, especially from raw meat.&nbsp;

●Rinse the outside of fresh fruits and vegetables with clean, running water, rubbing the&nbsp;food&nbsp;gently with your hands. As one example, a watermelon may have dirt on the outside that could be transferred by a knife to the flesh when cutting it open. Bacteria washes, produce washes and bleach are not recommended for rinsing fruit and vegetables.

●Meat should not be rinsed before cooking. Rinsing can lead to splattering water with meat juice to your ready-to-eat&nbsp;food&nbsp;counters and cabinets.&nbsp;

Also, Blakeslee said, wash hands anytime you are moving from one&nbsp;food&nbsp;to another, which helps avoid cross-contamination.&nbsp;

Three&nbsp;<a href="http://www.foodsafety.gov/keep-food-safe/4-steps-to-food-safety" target="_blank">additional&nbsp;food&nbsp;safety steps</a>&nbsp;include:

Separate.&nbsp;Keep raw meat on one plate, and cooked meat on a separate plate. Also, keep raw meat away from ready-to-eat&nbsp;foods, such as salad and fruit.

Cook.&nbsp;If bacteria is present on meat, it can survive unless the meat is properly cooked. Use a&nbsp;food&nbsp;thermometer to keep your&nbsp;food&nbsp;safe to eat. Steaks, roasts, chops and fish should be cooked to an internal temperature of 145 degrees F; ground meats (including beef, pork and lamb) should be cooked to 160 F; and all poultry products should be cooked to 165 F.

“Watching those temperatures is not just for&nbsp;food&nbsp;safety, but it can also be a good quality indicator, too,” Blakeslee said. “It will ensure that you’re not over-cooking your&nbsp;food.”

Chill.&nbsp;As outdoor temperatures get warmer, it becomes even more important to keep&nbsp;food&nbsp;chilled. “A good rule of thumb is to get&nbsp;food&nbsp;back in the refrigerator or ice chest within two hours,” Blakeslee said. “If it’s over 90 degrees outside, you want to cut that back to one hour because your&nbsp;food&nbsp;is going to heat up pretty quickly when it’s left out at ambient temperature.”&nbsp;

As for the grill itself, Blakeslee urges homeowner to give it a good cleaning before the first cookout of the season. That includes scraping the grate with a stiff brush, or using approved cleaners. Clean out the grease pan or residual grease on the bottom of the grill. Check connection points on a gas grill to avoid gas leaks.&nbsp;

“And you want to find a spot in your backyard that is away from your house, not too close to it because the residual heat from the grill could damage the siding on your house,” Blakeslee said. “I’ve seen a hot grill melt vinyl siding.”&nbsp;

Never grill in a garage, even if it’s raining. The smoke from the grill could cause carbon monoxide poisoning.&nbsp;

K-State food scientist shares safety tips for outdoor grilling

In an effort to bring more drivers into the industry, Doug Bradley Trucking, Inc., is establishing a scholarship fund at Salina Area Technical College.

The Doug Bradley Trucking Scholarship Fund will pay full tuition for two students in each of the college’s four Commercial Truck Driving classes each year.

Salina Tech’s Commercial Truck Driving class is eight weeks long, and tuition is $3,459. The next two scheduled classes begin Aug. 19 and Oct. 18.

In recent years, Bradley Trucking has donated semis and trailers to Salina Tech for use in the Commercial Truck Driving program.

“That equipment is being put to very good use” said company President Jamie Bradley. “In our industry, one of the struggles we face is to find qualified drivers, to find competent, safe drivers that we can put behind the wheel. For us to give up a couple of trucks to help create those drivers is a good decision for us – and these new scholarships are another way to help us secure the drivers our company depends on.”

Larry Pankratz, Director of the Salina Tech Foundation, said partnerships such as this new scholarship fund, benefit the college, the employers and future students.

Doug Bradley Trucking establishes Salina Tech scholarship fund

Earlier this week, a few weak tornadoes were reported in parts of central Kansas. Those tornadoes officially ended the record-breaking streak of consecutive days without a confirmed tornado in the National Weather Service-Wichita forecast area.

The City of Salina is making preparations for a new automated trash collection service.

Under the new program, which is scheduled to begin July 19, city sanitation customers, including those whose trash is collected along the alleys, each will receive a new trash cart for free, according to information on the city's website. The new trash carts will be six gallons larger that the current green carts.

"The carts are designed to fit the new specialty side-loader trucks that use an automated arm controlled by the driver to lift and empty waste from the cart. These carts are also compatible with the City of Salina’s current trucks for our alley customers," the city noted.

Although the automated trash collection method will be new for the City of Salina, automated trash collection has been used in the United States since the 1970s, according to information on the city website. 

The city explained that it was switching to the new service to "improve employee and public safety, reduce employee injuries, and keep monthly service fees low by improving our collection efficiency."

After July 19, items sitting outside the carts will no longer be collected, according to information from the city.

"If you regularly have a full trash cart, use a yard waste cart or set bags outside your trash cart, we recommend you request at least one additional cart," the city noted on its website.

The new trash collection service includes one 96-gallon cart for $17 per month. Each additional cart is $2 per month.

City sanitation customers soon will receive cart selection mailers containing information about the program. The mailers will allow customers to evaluate their waste cart needs and complete the cart selection process by choosing the number of waste carts for their household, the city noted. 

Prior to June 18, customers will need to submit their selections by either returning their postcards or entering their information on the selection website. The selection website URL will be included in the mailer.

According to the city, the new carts will be delivered and the old carts removed during a two-week period beginning July 5.

"On your first regular collection day on or after July 5th, please set out all of your old, existing City of Salina trash and yard waste carts for removal by the contractor. If you received your new cart(s), but still have your old, existing trash and yard waste carts, please leave them out until they are emptied and removed. Please do not place any additional trash or yard waste in them once they’ve been emptied. They will be removed within the next few days. If you did not receive your new cart(s), then please store all your existing carts and set them all back out on your next normal collection day to be removed," the city noted.

The first twister, an F3 with a track five miles long, leveled two farms between eight and five miles southwest of McPherson. 

The second was a violent F4. It's track was 25 miles long and around 440 yards wide as it tore through Marion and Chase counties. This second twister destroyed ten farms. On one of the farms, every building was swept away. The second twister killed two people and injured four.&nbsp;&nbsp;

Multiple walk-in vaccination clinics offered in June

For the first time in nearly a month, the 7-0 Liberty will return to Salina to play in front of a home crowd on Saturday, something the team and players have been anticipating for several weeks.

While the product on the field will be the main attraction as the undefeated Liberty host the 4-3 Dodge City Law, the Tony's Pizza Events Center will be hosting a plethora of events to kick off Memorial Day weekend in style.

At 10:30, the flag football tournament, hosted by Liberty running back Dominique Carson will kick off the days events.

The official tailgate party kicks off at 3pm in the TPEC parking lot with a bounce house for the kids and a 50/50 raffle to support Bikers Against Child Abuse.

At 4pm, judging will begin for the best tailgate with awards being handed out to the three best setups on the lot.

Fans can earn points for having the most Liberty gear present, having the largest tailgate on the lot and having the best food. 

The winner will take home $100 and an autographed Liberty football, second place will receive $50 and a Salina Liberty t-shirt and third place will take home $25 and a Liberty license plate so bring your A-game.

Awards will be given out during the first quarter media break and fans must be present to win.

Kickoff between the Liberty and Law is set for 6:30pm and the theme of the game is military appreciation. Veterans will have a chance to shake hands with fans and players and be recognized before the game.

Fans can stick around 10-15 minutes after the game for autographs from their favorite Salina Liberty players as well.

1st Infantry Div. offers reminder of reason for Memorial Day

Two Salina teens were arrested after multiple incidents east of Salina Thursday morning.

Archie Ponton, 373 N. Simpson Road, told deputies that a window sensor on his home alerted him to a window that had been broken, Saline County Sheriff Roger Soldan said this morning. Surveillance video showed two females standing in Ponton's yard, one of whom was seen throwing a brick or rock at a window of Ponton's home.

Deputies also were alerted to a car stuck in a field around the corner in the 6100 block of Country Club Road. In the 2001 Ford Escort was Ebony Burke, 19, of Salina, however, the other female was missing, Soldan said. Deputies searched Burke's car and located drugs and paraphernalia, Soldan said.

A drone was deployed to help locate the second female. According to Soldan, Annie Greer, 18, of Salina, was located near a second car that was stuck in a field near 6264 Country Club Road. Soldan said the car, a 2006 gray Hyundai Sonata, was taken from a locked garage at 6264 E. Country Club Road belonging to Garry Gatten. The keys were in the car. The car belonged to Gatten's 84-year-old mother, Soldan said.

Burke was arrested on the following requested charges, Soldan said.

City and county offices will be closed Monday in observance of the Memorial Day holiday.

All offices will resume regular hours on Tuesday.

Additionally, there will not be a Salina City Commission meeting on Monday.

The Salina Public Library also will be closed on Monday and will resume regular hours on Tuesday.

Sanitation crews will be providing regularly scheduled collection on Monday, however, the landfill will close at 2 p.m. 

Additionally, the Household Hazardous Waste, Salina Drive-thru Recycling Center and General Services facilities will be closed. 

All standard hours of operation for the Household Hazardous Waste facility and General Services will resume Tuesday. Regular hours for the Salina Drive-thru Recycling Center will resume on Wednesday.

A flood warning is in effect for the Saline River at Tescott until late tonight, according to the National Weather Service in Wichita.

At 7:30 a.m. CDT Friday the river was at 26.4 feet. Flood stage is 25.0 feet.

Minor flooding is occurring and minor flooding is forecast. The river is expected to fall below flood stage late this afternoon and continue falling to 18.2 feet Saturday morning.

IMPACT: At 25.0 feet, low lying areas near the river flood.

Additionally, the National Weather Service in Wichita has extended the flood warning for the Cottonwood River near Florence until just after midnight tonight.

Flood stage is 22.0 feet. The river is expected to rise to a crest of 24.1 feet this morning. It will then fall below flood stage this afternoon.

IMPACT: At 24.0 feet, outside the levee system in southeast Florence, flood waters flow across Park Ave Road and reach the foundation of a residential home.

The crime occurred between 1:15-1:30 a.m., where a male forcibly entered the property. The person collected multiple items throughout the building, but left the items behind. The total loss value is $75.

The male was of medium height and appeared to be thin. The person was wearing jeans, a hooded sweatshirt, and possibly wearing two tone cowboy boots as shown below.

DAVE SAYS: Being on the same page is vital to your family’s future

Students from Dr. Jamie Kootz’s senior seminar class at Kansas Wesleyan took the capstone project to heart — literally — raising more than $5,000 for the American Heart Association during the spring semester.

“This total is significantly higher than last year's,” Kootz said. “With the fact that these students are in a unique time&nbsp;—&nbsp;still in a pandemic&nbsp;—&nbsp;raising over $5,000 is remarkable.”&nbsp;

The class was divided into two groups, and each set a $2,500&nbsp;goal&nbsp;for the American Heart Association's Kids Heart Challenge.

“The Kids Heart Challenge is about raising money for kids who are born with heart defects and often go through multiple surgeries as children,” Kootz said.&nbsp;“The money will help those families pay for the surgeries and fund research to help the AHA develop more technology to improve medical treatments.”

Throughout the semester, the teams held fundraisers. Section A, led by Lauren Blue, raised $500 during a Super Bowl challenge. Other fundraisers by Section A included a basketball tournament, sand volleyball tournament, and fundraisers at local restaurants.

Section B,&nbsp;led&nbsp;by Carlee Becker,&nbsp;also hosted fundraisers.&nbsp;Some of the highlights were pie in the face&nbsp;—&nbsp;that raised $500&nbsp;—&nbsp;buy a&nbsp;Yotee&nbsp;at the Library, and&nbsp;a&nbsp;kickball tournament.&nbsp;

Students also worked individually to raise money and awareness.&nbsp;

“Every student shared the Kids Heart Challenge to social media, sent emails and even made phone calls to reach their personal and class goal,” Kootz said.&nbsp;

Another aspect of the&nbsp;project&nbsp;was working with local schools. The KWU students partnered with physical education classes at St. Mary Elementary and Meadowlark Elementary via Microsoft teams.&nbsp;The KWU&nbsp;seniors&nbsp;organized a guest speaker and&nbsp;discussed&nbsp;the importance of heart health. They also facilitated relays, tag, tic-tac-toe, trash can basketball and Simon says games.&nbsp;

The project is part of the&nbsp;senior&nbsp;seminar, a capstone course for the sport and exercise science program. &nbsp;

“They&nbsp;are to put together an event working with an elementary school as well as to raise money to help kids who need money to pay for health expenses,” Kootz said.

“The American Heart Association was selected about 14 years ago because of our department's passion for health and wellness. The reason for the Kids Heart Challenge is that we want to promote healthy hearts at a young age, as well as support those kids who have heart defects to be able to have money to have procedures.

KWU senior seminar steps up to the challenge

ABILENE - The Dickinson County Historical Society has announced that Austin Anders, a native of Dickinson County, has been named executive director of the nonprofit devoted to the collection, preservation, promotion, and sharing of the history of Dickinson County and the State of Kansas. 

Anders will assume the position on June 7. An open house to introduce Anders to the membership and community will be held on June 13 from 2-5 p.m. at the Heritage Center, 412 S. Campbell Street in Abilene.

Anders, grew up south of Chapman and is a graduate of Chapman High School. He holds a degree in Business Management and Automotive Restoration from McPherson College and has held a number of leadership positions at the Dickinson County Historical Society. In recent years, he has taken an active leadership role for the Lyona United Methodist Church and has been involved in 4-H and a number of antique car clubs. Anders brings a wealth of local experience and knowledge along with a passion for artifact restoration, educational event planning, and demonstration of artisanship and agriculture practices of the past.

Through Anders’ leadership and continued active support of the Board of Trustees, the membership, and the community at large, the operation of the Heritage Center, cultural events, publications, and preservation of documents and artifacts will display a rebirth after the disruption caused by the COVID 19 pandemic and extended vacancy in the Director position.

The Dickinson County Historical Society operates the Heritage Center and manages the Jeffcoat Photography Studio Museum in conjunction with the Jeffcoat Foundation. The Heritage Center is open Thursday-Saturday from 10 a.m. to 5 p.m. and on Sunday from 1-5 p.m. The Jeffcoat Museum is open Wednesday, Friday, and Saturday from 8:30 a.m. to 4:30 p.m. and Thursday from 9:30 a.m. to 5:30 p.m.

The Salina Area United Way is restocking its children's book supply and it needs your help!

The organization is hosting a children’s book drive beginning Tuesday and running through June 11. Drop off new and gently used children’s books (birth through high school reading levels) at 113 N. Seventh Street between 9 a.m.-3 p.m. Monday through Friday.

“Because the Salina Area United Way’s summer reading program, Raising Active Wild Readers, successfully distributed 2,030 books last summer, we need to restock. The RAWR program is asking for donations of picture books and board books, beginning and advanced chapter books, graphic novels, and culturally diverse books,” said Brenda Gutierrez, program director for the Salina Area United Way.

The Salina Area United Way is partnering with the USD 305 Summer Meal Service Program for the book distribution. After kids pick up their free curbside lunch, their next stop can be for a free book. Children are encouraged to make their book selection, or United Way staff and volunteers will assist children who choose to remain in the vehicle.&nbsp;&nbsp;

“Books in the home are a crucial element of early reading. Ultimately, reading ability impacts career choices as an adult. Good readers have brighter futures,” said&nbsp;Deb Kohn, USD 305 School To Career coordinator.

On May 28, 1977, 165 people were killed when fire raced through the Beverly Hills Supper Club in Southgate, Kentucky. 

In 1863, the 54th Massachusetts Volunteer Infantry Regiment, made up of freed Blacks, left Boston to fight for the Union in the Civil War. 

In 1912, the Senate Commerce Committee issued its report on the Titanic disaster that cited a "state of absolute unpreparedness," improperly tested safety equipment and an "indifference to danger" as some of the causes of an "unnecessary tragedy."

In 1918, American troops fought their first major battle during World War I as they launched an offensive against the German-held French village of Cantigny; the Americans succeeded in capturing the village. 

In 1929, the first all-color talking picture, "On with the Show!" produced by Warner Bros., opened in New York.

In 1934, the Dionne quintuplets — Annette, Cecile, Emilie, Marie and Yvonne — were born to Elzire Dionne at the family farm in Ontario, Canada.

In 1937, President Franklin D. Roosevelt pushed a button in Washington signaling that vehicular traffic could begin crossing the just-opened Golden Gate Bridge in California. Neville Chamberlain became prime minister of Britain.
